How would you define your style?
I love good quality ingredients and pastry, baking or chocolate work done well. These are the standards I set and I don't compromise. I am customer focused tailoring my work to my client. Thus, my portfolio ranges from simple to intricately detailed.
We've been in the winter months here in Melbourne so I have been working a lot with citrus fruits - lemons, limes and oranges. I have played with quince and pears as well mixing spices and caramel.
Your greatest culinary inspirations/influences?
Pastry in Paris. It never fails to amaze me how simply beautiful pastry in Paris is. I have enjoyed every single gateaux or tart I've had there during my trip.
